My husband is at school late on Tuesdays and Wednesdays this semester, so I will be posting more of these "single girl" dinners. Tonight's dinner is made from leftover sauce and rigatoni.
This is just a jar of sauce I had doctored up for pizza quesadillas the other night. Tonight I added 1/2 green bell pepper, julienned, and cooked the sauce on low until the pepper was soft. Poured that over some rigs (cooked per package instructions) and voila! Dinner for one in under 20 minutes.
Don't forget the vino! Cheers!
