Loaded Potato Chips




I had previously come a cross a couple ways of making these, so I decided to try both and see what I like better.  The prep is the same, the method for cooking is stove-top vs. oven.  I thought they both came out great, so you make the final decision...




Ingredients:

  • 1 baking potato
  • 1/4 cup cheddar cheese
  • 1/4 cup bacon bits
  • Sour Cream (optional)





Baking:

  1. Preheat oven 400 degrees.  
  2. Slice potatoes about 1/4 inch thick.  I recommend using a mandolin.
  3. Line baking sheet with foil and spray lightly with non-stick cooking spray.
  4. Spread potato slices on sheet and add cheese and bacon bits.
  5. Bake for 20 minutes, until potatoes are done and cheese is melted.




Stove-top:

  1. Preheat cast-iron skillet on medium. 
  2. Slice potatoes about 1/4 inch thick.  Again, I recommend using a mandolin. 
  3. Lightly spray skillet with non-stick cooking spray.
  4. Add potato slices, cook for 10 minutes then turn over.
  5. Add cheese and bacon bits and cook an additional 10 minutes, or until cheese is melted and potatoes are done.
  6. You will not be able to fit all the slices at once in the skillet.  So, take your time and don't crowd the taters!







Serve with sour cream.





Like I said, both ways taste great.  Baking can potentially take longer than the skillet, but it's all about the same.  Potatoes can be hard to cook and often take longer than expected, so just deal with it.  Regardless, I found this to be a quick and easy snack for one of those random Sunday afternoon cravings.
