Drunk Mac and Cheese


I have always been a fan of pairing hot dogs with mac and cheese. On my hot dog, I prefer mustard and diced onion. I happened to be a little tipsy and in the mood for such a meal one night, but was without the dogs. So, I thought, "Perhaps, I can trick myself into thinking that's what I'm eating." And Drunk Mac and Cheese was born...

Ingredients:
1 box of macaroni and cheese
2T yellow mustard
1/4 cup diced white onion
1/4 cup shredded cheddar (optional)

Directions:
Prepare a box of macaroni and cheese, I use Annie's white cheddar shells.
Mix in mustard and onion. Sometimes, I also add a little shredded cheddar, but it really depends on how drunk I am. And don't worry, I've eaten this sober and have been just as satisfied!

Potluck Summer Parties: What should I bring?

I'm going to an end of summer party in a couple of weeks and need to bring a dish to pass.  I've been pondering what I could make and decided to make a list of the possibilities.  Of course there's the obvious selection of meat, but this list is geared towards what you could bring as a guest.

Macaroni and Cheese

And then there are all the pasta and potato salads that you could possibly think of.  In my search, I think I have decided on the broccoli salad.  Unless anyway has a suggestion for me!  What's your favorite dish to make for parties?

Baked Mac and Cheese




Simple and straight-forward.  I have been making macaroni and cheese like this since I start cooking and have NEVER had a complaint.






Ingredients:

  • 8oz pasta (I use shells or elbows)
  • 4oz Extra Sharp Cheddar, cut into 1/4-inch pieces
  • 6 slices American cheese
  • 3T butter
  • 1/3 cup milk


Directions:

  1. Preheat oven 400 degrees.
  2. Cook pasta according to package directions.
  3. Spray 8x8 glass baking dish.
  4. Pour pasta into dish.  Mix in butter and milk.
  5. Tear up 4 slices of American, stir it and the cheddar pieces into the pasta.
  6. Take the remaining 2 slices of American, tear them into strips and lay across the top of the pasta.
  7. Bake for 25-30 minutes, until cheese is completely melted and bubbly on top.


Tips:

  • For extra crispness, stir in breadcrumbs and also sprinkle some on top.
  • I've also cooked this at 425 degrees for 20 minutes, but I cut the cheddar into smaller pieces, so everything melts more quickly.
